Easy Broccoli Cheese Soup


  • 4 cups Broccoli (cut into florets)
  • 4 cloves Garlic (minced)
  • 3 ½ cups broth (chicken or vegetable)
  • 1 cup Heavy cream
  • 3 cups Cheddar cheese


  1. In a large pot sauté garlic for one minute, until fragrant, over medium heat.
  2. Add the chicken broth, heavy cream, and chopped broccoli. Bring to a boil, then reduce heat and simmer for 10-20 minutes, until broccoli is tender.
  3. Add the shredded cheddar cheese gradually, stirring constantly until cheese is fully melted. Make sure to keep it at a low simmer to prevent seizing. Remove from heat once all the cheese melts.
