Killer Cornflake Breaded Chicken


  • 4 boneless, skinless chicken breast halves
  • ½ cup all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • Salt and pepper
  • 2 large eggs
  • 6 cups coarsely crushed cornflakes
  • 3 tablespoons unsalted butter, melted


  1. Preheat oven to 375°. Place foil on a baking sheet. Place chicken breast half between two sheets of plastic wrap. Pound chicken to an even ½-inch thickness. Mix flour, thyme, cayenne pepper, salt and pepper. In a second dish, whisk eggs. Spread cornflake crumbs on a second baking sheet.
  2. Dip chicken into seasoned flour, then dip in egg mixture. Remove chicken and dip into cornflakes. Transfer to baking sheet.
  3. Drizzle chicken with melted butter or hot sauce. Bake until cooked and crisp and enjoy your killer fingers.
