RASPBERRY ALMOND
OATMEAL

INGREDIENTS

  • 2 cups of unsweetened almond milk
  • 2 tablespoons of olive oil
  • 1½ cups of rolled oats
  • ½ teaspoon of salt
  • ¼ cup of coarsely chopped, dry-roasted almonds
  • ¼ cup of honey (or maple syrup)
  • 1 teaspoon of ground ginger
  • 1 teaspoon of vanilla
  • 1 cup of fresh raspberries

DIRECTIONS

  1. Preheat oven to 350 °F.
  2. In a large bowl, combine the oats, ginger, salt and chopped almonds.
  3. In a separate bowl, whisk the milk, honey, oil and vanilla together.
  4. Add to the oat mixture, stirring until it’s combined. Fold in the fresh raspberries.
  5. Spread the oat mixture into a baking dish and bake for 30 minutes until oats have set.
  6. Remove the oatmeal from the oven and let it sit for 10 minutes. Top with berries and drizzle with a little honey or maple syrup if desired.
