Two More Ways to Get More for Less
2 cups of unsweetened almond milk
2 tablespoons of olive oil
1½ cups of rolled oats
½ teaspoon of salt
¼ cup of coarsely chopped, dry-roasted almonds
¼ cup of honey (or maple syrup)
1 teaspoon of ground ginger
1 teaspoon of vanilla
1 cup of fresh raspberries
Preheat oven to 350 °F.
In a large bowl, combine the oats, ginger, salt and chopped almonds.
In a separate bowl, whisk the milk, honey, oil and vanilla together.
Add to the oat mixture, stirring until it’s combined. Fold in the fresh raspberries.
Spread the oat mixture into a baking dish and bake for 30 minutes until oats have set.
Remove the oatmeal from the oven and let it sit for 10 minutes. Top with berries and drizzle with a little honey or maple syrup if desired.
