PEA AND
CARROT
SALAD

INGREDIENTS

  • 2   cups of local peas
  • 4   medium carrots
  • 2   teaspoons of honey
  • 2   tablespoons of freshly squeezed lemon juice
  • 6   tablespoons of extra virgin olive oil
  •   teaspoon of salt
  •   teaspoon of freshly ground black pepper
  • 2   tablespoons of chopped fresh mint

DIRECTIONS

  1. Peel carrots and cut thin slices on a diagonal.
  2. In a large bowl, whisk together the honey, lemon juice, olive oil, salt, pepper and mint.
  3. Add the carrots and peas. Toss well to coat. Taste and adjust seasoning if necessary.
  4. Transfer to a serving platter and garnish with a sprig of fresh mint.
