INGREDIENTS

  • Small cantaloupe
  • Spring mix salad
  • cup of sliced almonds
  • 2 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • cup of crumbled feta

DIRECTIONS

  1. Cut the cantaloupe in half and remove seeds. Remove the peel and cut into 1-inch-wide wedges.
  2. On medium-high heat, grill the cantaloupe wedges for 2 minutes a side. Place them on a paper towel to let them cool.
  3. On a large platter, arrange the spring mix and top with the wedges. Drizzle with the oil and vinegar. Sprinkle with feta and almonds, then season with salt.
