Classic
Tomato Soup

INGREDIENTS

  • 3 lbs  of fresh tomatoes, quartered
  • 1       onion, diced
  • 5       garlic cloves, peeled
  • 3 tsp. dried herbs: basil, oregano, rosemary
  • 3 tbsp.olive oil
  • 2 cups of chicken or veggie broth

DIRECTIONS

  1. Preheat oven to 425 F (220 C).
  2. Spread tomatoes, garlic and onion onto baking sheet.
  3. Sprinkle with dried herbs, salt and pepper to taste.
  4. Drizzle with olive oil.
  5. Roast for 30 min., mixing half way through.
  6. Bring broth to a boil.
  7. Add roasted veggies to broth.
  8. Optional: Add a splash of heavy cream.
  9. Blend with hand blender until smooth.
  10. Dunk some grilled cheese and dig in!
