While it is true that sirloins are a little less tender, it is indeed the most flavourful steak. “Cap off” means the visible fat has been removed from the steak. It is recommended the steak be placed at room temperature for half an hour before cooking. Season your steak with salt and pepper or other spices at least 15 minutes before cooking so the seasoning is well absorbed.
